Turkish Yeast Açma Rolls

Ingredients

  • Half package fresh yeast or 1 package instant yeast
  • 1 cup warm milk
  • 1 cup warm water
  • 1 cup vegetable oil
  • 2 egg whites
  • 2 egg yolks (for brushing)
  • 2 tablespoons sugar
  • 1.5 teaspoons salt
  • 6 cups flour (adjust as needed)
  • 60-100 grams soft butter
  • Oil for counter (as needed)
  • Fine sesame seeds for topping

Preparation

  1. Place warm water, milk, sugar, and yeast in a mixing bowl.

  2. Stir until the yeast dissolves.

  3. Add oil and egg whites, and mix well.

  4. Gradually add flour and salt, then knead the dough thoroughly.

  5. Let the dough rise until doubled in size.

  6. Punch down the dough to release gas.

  7. Pour oil on the counter.

  8. Place the dough on the counter and roll it out by hand or with a rolling pin.

  9. Spread softened butter evenly over the dough.

  10. Fold the dough while spreading butter again.

  11. Shape into a long rectangle.

  12. Cut into strips about two fingers wide.

  13. Divide into 12 pieces.

  14. Fold each strip in half, twist, and join the ends.

  15. Let rise in the pan for 25 to 30 minutes.

  16. Mix egg yolk with 1 tablespoon oil and whisk.

  17. Brush the mixture onto the açmas.

  18. Bake in a preheated 175°C oven for 30 to 35 minutes.

  19. Cover the baked açmas and serve after 10 minutes.
