Creamy Potato and Bacon Soup
Ingredients
- 5 potatoes, cut into large cubes
- 300g bacon, cut into pieces
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic
- 1/4 cup wheat flour
- 2 cups milk
- 1 cup cream or heavy cream
- 350g chicken broth
- Salt, black pepper, garlic powder, and seasoning to taste
- 100g freshly grated cheddar cheese
- 100g mozzarella cheese
Preparation
In a large pot, cook the bacon over medium heat until crispy.
Add the butter and the diced onion to the pot, sautéing for about 5 minutes. Add the garlic.
Add the flour and stir with a whisk. Cook for about 1-2 minutes.
Slowly add the cream and milk to form a liquid cream. Then add the chicken broth and stir well.
Season and add the potatoes to the pot. Cook until the potatoes are tender, about 15 minutes.
Reduce the heat to medium-low. Add the cheeses and the bacon.
Mash the potatoes with a potato masher until you reach the desired consistency.
Serve and garnish with additional cheddar cheese, bacon, and parsley.
