Barnyard Millet Kheer Dessert
Ingredients
- 1/2 cup barnyard millet
- 4 cups full fat milk
- 3/4 cup jaggery powder (adjust to taste)
- 2 teaspoon cardamom powder
- 2 tablespoons chopped nuts (cashews, almonds, and pistachios)
Preparation
Rinse the barnyard millet thoroughly in water and drain.
Add the milk to the pan.
Bring to a boil, then reduce the heat and let it simmer. Add the millet. Sprinkle in the cardamom powder, nuts and mix. Stir occasionally to prevent the milk from sticking to the bottom.
Cook until the millet is tender and the mixture thickens, about 45 minutes.
Add the jaggery powder and stir well until it dissolves completely. Cook for a while about 5-7 minutes.
Garnish it with some pistachios, raisins or more nuts if you wish.
Serve the kheer warm or chilled, as per your preference.

Barnyard millet is gluten-free and packed with protein, fiber, iron, and calcium. It has a low glycemic index, making it a healthy choice for a dessert.
