Shrimp and Vegetable Ramen

Ingredients

  • 1 tablespoon corn oil
  • 1 medium onion, finely chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper, coarse
  • 1 teaspoon coriander
  • 1 teaspoon crushed chili
  • 10 medium shrimp, peeled
  • 1 medium carrot, cut into very thin strips
  • 1 medium bell pepper, cut into very thin strips
  • 6 mushrooms, sliced
  • 1 tablespoon ginger sticks, thin
  • 1/4 cup soy sauce
  • 4 cups meat or chicken broth
  • 100 grams egg noodles
  • 1/4 cup chopped parsley
  • 1 green onion, leaves
  • 1/2 teaspoon sesame
  • 2 boiled eggs

Preparation

  1. In a pot, heat the oil, add the onion, salt, pepper, coriander, chili and stir until wilted without changing color

  2. Add the shrimp and stir for a minute

  3. Add the carrot and stir for a few seconds

  4. Add the bell pepper and stir for a few seconds

  5. Add the mushrooms and stir for a few seconds

  6. Add the ginger and stir for a few seconds

  7. Add the soy sauce and broth, and let it boil for 5 minutes

  8. Add the noodles and let it boil for 3 minutes

  9. Place the noodles in a deep plate

  10. Sprinkle the parsley, green onion, and sesame

  11. Cut the eggs into halves and place them on top of the noodles, then serve immediately
