Shrimp and Vegetable Ramen
Ingredients
- 1 tablespoon corn oil
- 1 medium onion, finely chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper, coarse
- 1 teaspoon coriander
- 1 teaspoon crushed chili
- 10 medium shrimp, peeled
- 1 medium carrot, cut into very thin strips
- 1 medium bell pepper, cut into very thin strips
- 6 mushrooms, sliced
- 1 tablespoon ginger sticks, thin
- 1/4 cup soy sauce
- 4 cups meat or chicken broth
- 100 grams egg noodles
- 1/4 cup chopped parsley
- 1 green onion, leaves
- 1/2 teaspoon sesame
- 2 boiled eggs
Preparation
In a pot, heat the oil, add the onion, salt, pepper, coriander, chili and stir until wilted without changing color
Add the shrimp and stir for a minute
Add the carrot and stir for a few seconds
Add the bell pepper and stir for a few seconds
Add the mushrooms and stir for a few seconds
Add the ginger and stir for a few seconds
Add the soy sauce and broth, and let it boil for 5 minutes
Add the noodles and let it boil for 3 minutes
Place the noodles in a deep plate
Sprinkle the parsley, green onion, and sesame
Cut the eggs into halves and place them on top of the noodles, then serve immediately
