Spicy Marinated Battered Fried Shrimp

Ingredients

  • 1 kg medium-sized fresh shrimp
  • 1 large piece ginger
  • 15 cloves garlic
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 tablespoon turmeric
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chopped chili
  • 1 teaspoon lemon zest
  • 1/4 cup lemon juice

Coating

  • 3 large eggs
  • 2 cups flour
  • 2 tablespoons baking powder
  • 1 teaspoon turmeric

Frying

  • Corn oil

Preparation

  1. Peel the shrimp and remove the tail

  2. In a food processor, place ginger, garlic, cumin, coriander, turmeric, paprika, salt, pepper, chili, lemon zest and juice, and blend until it becomes a very smooth paste

  3. Place the shrimp in a bowl, add the marinade, and mix well to coat; if time allows, refrigerate for several hours to enhance flavor, or fry immediately

  4. In a wide bowl, combine flour, baking powder, and turmeric

  5. Pour eggs over the marinated shrimp and mix to coat lightly

  6. Coat a few shrimp pieces in the flour mixture, press to adhere evenly for better crispiness

  7. Heat oil in a deep pan, fry the shrimp in batches until golden brown, and serve hot

Tips

  1. For a crispier coating, fry the shrimp immediately after coating to prevent the flour from becoming soggy

  2. Refrigerating the marinated shrimp can improve flavor but is optional
