Air-Fried Rosemary Chips and Sweet Potato Fries with Mayo

Ingredients

Chunky chips

  • 2 large floury potatoes
  • Rosemary salt

Sweet potato fries

  • 2 sweet potatoes
  • 2 tsp smoked paprika
  • Salt

Mayo

  • 100ml soy milk
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice
  • Generous pinch of salt
  • 230g extra virgin rapeseed oil

Preparation

  1. Peel and slice the sweet potatoes into fries and the regular potatoes into chunky chips.

  2. Blend soy milk, Dijon mustard, lemon juice, and salt, then slowly pour in oil until emulsified to make the mayo.

  3. Toss the sweet potato fries with paprika and salt, and the chunky chips with rosemary salt.

  4. Cook in an air fryer at 200°C for 20-25 minutes, shaking halfway through, until crispy.

  5. Serve with the creamy mayo for a crispy, golden bite.
