Super Tender Southern Fried Chicken
Ingredients
Marinade
- 2kg chicken drumsticks
- 4 tbsp double cream
- 4 tbsp Greek yoghurt
- 1 tsp garlic powder
- 1 tsp chilli powder
- 1 tsp parsley
- 1 tsp black pepper
- 1/2 tsp ground white pepper
- 1/2 tsp salt
Southern fried mix
- 3 cups breadcrumbs
- 1 - 1.5 tbsp all purpose seasoning (adjust to taste)
- 1 tbsp parsley
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1/2 tbsp black pepper
- 1 tsp ground white pepper
- 1 tsp cayenne pepper
Coating
- plain flour
- 3 whisked eggs
Preparation
Marinate the drumsticks using the marinade ingredients for at least 1 to 3 hours or overnight for maximum tenderness.
Combine the ingredients for the Southern Fried mix in a large bowl.
Dredge the marinated drumsticks in plain flour, then dip in whisked egg, and finally coat with the Southern Fried mix. Let the coated pieces set on a wire rack for 10 minutes.
Deep fry the drumsticks over medium to medium-high heat for 15 minutes, turning periodically, or air fry at 180°C for 20 minutes, rotating halfway, until fully cooked.
Transfer the cooked drumsticks to a cooling rack to drain and keep the coating crispy, then serve with your favorite sides.
Tips
Start with less all-purpose seasoning in the mix and adjust to taste by testing it to ensure it is properly seasoned without needing extra salt.
Check that the chicken is cooked through by cutting open a piece to make sure there is no pink inside.
