Big Juicy Beet Patty

Ingredients

  • 2 cups (beets, peeled and cubed)
  • 1 large egg
  • 1/2 cup uncooked quinoa
  • 100g feta cheese, crumbled
  • 1/2 onion, finely chopped
  • 4–8 tbsp. gf oat flour
  • 1 tbsp. olive oil
  • 1 garlic clove, crushed
  • 2 teaspoons lemon juice

Preparation

  1. Preheat oven at 350°f/180° c and line a baking sheet with parchment paper or foil

  2. Set aside

  3. Salt and freshly ground pepper

  4. Bake the quinoa and set it aside

  5. Steam the beet on low-heat inside a covered steamer basket

  6. Steam until they are fork-tender

  7. Chuck them in a food processor and pulse 2-3 times

  8. Try not to mash them!)

  9. Shift into a mixing bowl and combine with the remaining ingredients

  10. Stir well

  11. Add more oats if the mixture feels too mushy

  12. Use your hands/cup to mold the beet patty

  13. Bake for 15 min, then flip over to bake the other side for 15 more mins

  14. Tada??‍♀️! once done, you can assemble your beet burger and team it up with guacamole ?
