Chunky Monkey Breakfast Cookies
Ingredients
- 1 cup rolled oats
- 1 1/2 mashed banana
- 1/3 cup cashew butter
- 2 tablespoons maple syrup
- 1/4 cup chocolate chips
Preparation
Preheat oven to 350°F
In a bowl, combine the rolled oats, mashed banana, cashew butter, and maple syrup.
Mix together with a spatula or wooden spoon.
Add in the chocolate chips and stir.
Shape the mixture into 10-12 cookies and place on a baking sheet
Bake at 350°F for 12 minutes.
Optionally, top with more chocolate chips.
