Chunky Monkey Breakfast Cookies

Ingredients

  • 1 cup rolled oats
  • 1 1/2 mashed banana
  • 1/3 cup cashew butter
  • 2 tablespoons maple syrup
  • 1/4 cup chocolate chips

Preparation

  1. Preheat oven to 350°F

  2. In a bowl, combine the rolled oats, mashed banana, cashew butter, and maple syrup.

  3. Mix together with a spatula or wooden spoon.

  4. Add in the chocolate chips and stir.

  5. Shape the mixture into 10-12 cookies and place on a baking sheet

  6. Bake at 350°F for 12 minutes.

  7. Optionally, top with more chocolate chips.
