Cinnamon Sugar Bagels with Maple Walnut Cream Cheese

Ingredients

  • 2 cups all-purpose flour (240g)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup thick dairy-free yogurt (may need more depending on the water content of the yogurt)

Toppings

  • 2 tbsp sugar + 2 tsp cinnamon

Maple walnut cream cheese spread

  • 1/2 cup vegan cream cheese
  • handful of chopped walnuts
  • drizzle of maple syrup

Preparation

  1. Combine the flour, baking powder, salt, and yogurt in a bowl and knead with your hands until it forms a dough ball.

  2. Cut the dough ball into 4 equal parts, roll each into a ball, poke a hole to form a bagel shape, and place on a baking sheet.

  3. Coat the top of each bagel with melted vegan butter and sprinkle with a generous amount of the cinnamon sugar topping.

  4. Bake at 350F for 20-25 minutes.

  5. While the bagels are baking, whisk together the cream cheese, chopped walnuts, and maple syrup.

  6. Once the bagels are done baking, slice them in half, spread with a generous amount of the cream cheese mixture, and enjoy.
