Easter Bunny Pineapple Coconut Cupcakes
Ingredients
For the cupcakes
- 1 1/2 cup Wholemeal Flour
- 1/2 cup @natvialiving sweetener
- 1/2 cup Coconut Milk
- 1/3 cup Pineapple Juice
- 1/4 cup Coconut Oil
- 2 tbs Desiccated Coconut
- 1 tsp Baking Powder
For the frosting
- 1/3 cup solid Coconut Cream
- 1 tsp Pink Pitaya Powder
Preparation
Preheat oven to 180°C
In a large bowl mix together sweetener, milk, juice and oil until combined
Add remaining cake ingredients and stir gently until combined
Pour into muffin trays and bake for 20-25 minutes or until cooked through
Once completely cooled whisk together frosting ingredients and top with whatever toppings you like
Store covered in the fridge
