Easy Fluffy Banana Cake

Ingredients

  • 5 medium bananas, mashed
  • 2 bananas, sliced thinly for decoration
  • 1.5 cups self-raising flour
  • 1/2 teaspoon baking soda (optional, if using all-purpose flour)
  • 1 teaspoon baking powder (optional, if using all-purpose flour)
  • 4 tablespoons cornstarch
  • 1 cup icing sugar
  • 1 cup corn oil or vegetable oil
  • a pinch of salt
  • 1 tablespoon ovalette
  • 3 large eggs
  • 1 teaspoon vanilla essence

Preparation

  1. Preheat oven to 180°C.

  2. Beat the sugar, eggs, and ovalette together until light and fluffy.

  3. Add the mashed bananas and oil, and beat briefly.

  4. Fold in the sifted flour mixture until well combined.

  5. Stir in the vanilla essence.

  6. Pour the batter into a greased baking pan.

  7. Decorate with thinly sliced bananas.

  8. Bake for 50 to 60 minutes or until a skewer inserted comes out clean.

Tips

  1. If self-raising flour is not available, use all-purpose flour and add the baking soda and baking powder.

  2. Baking time may vary depending on your oven temperature.
