Flourless Sweet Potato Donut Holes

Ingredients

  • 1 cup mashed sweet potato
  • 1 tsp. cinnamon
  • 1/4 cup nut or seed butter
  • 1/3 cup coconut sugar
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 cup vanilla protein powder
  • Sprinkles

Preparation

  1. Preheat oven to 350°F and spray a donut hole pan or a regular donut pan or muffin tin

  2. Place all of the ingredients into a high-powered blender or food processor and blend until creamy

  3. Spoon the batter or use a cookie scoop into the donut hole pan; this makes about 20 donut holes or 6 donuts; watch the time if making muffins

  4. Bake the donut holes for 16 minutes or the regular donuts for 10 minutes and top with sprinkles

Tips

  1. This recipe can also be made as regular sized baked donuts or muffins by adjusting the pan and baking time accordingly
