Healthy Vegan Breakfast Cookies with Oat Flour

Ingredients

  • 1 1/2 cup oat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup vegan soft butter
  • 1/2 cup sunflower seed butter
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 2 tbsp coconut milk
  • 1 tsp vanilla

Preparation

  1. Blend oats in the food processor and measure out 1.5 cups.

  2. Add all other ingredients to the bowl and mix until blended.

  3. Spoon out dough, form into balls, and flatten slightly.

  4. Bake at 375F for 15 minutes.
