Homemade Pumpkin Bread with Spices and Chocolate

Ingredients

  • 1 1/4 cups oat flour
  • 3 eggs
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1.5 tbs cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup chocolate (optional)

Preparation

  1. Preheat your oven to 350ºF.

  2. Mix all your wet ingredients together in a large mixing bowl and dry ingredients (except the chocolate chips!) in a medium mixing bowl.

  3. Add the wet into dry and mix until well combined but don't over mix.

  4. Pour the batter into a loaf pan lined with parchment paper and cover the top with a layer of chocolate chips.

  5. Bake in oven for about 42-47 minutes (mine took about 45) and let it cool in the loaf pan for 30 minutes before removing.

  6. Slice that ish up and enjoy with a heaping spread of nut butter.
