Millet Quinoa Cacao Cookies

Ingredients

  • 1 cup millet, quinoa, cacao porridge flour
  • 1/4 cup peanut butter
  • 1/4 cup sesame seeds butter or other nut butter
  • 1/2 tsp baking powder
  • 1/2 cup brown sugar or other sugar
  • 1 tsp vanilla extract
  • 2 tbsp olive oil
  • 3/4 cup chocolate chips

Preparation

  1. Preheat the oven to 180°C and line a baking sheet with parchment paper

  2. In a medium bowl, whisk the flour mix, brown sugar, and baking powder together, mixing well and breaking up any lumps in the flour

  3. Add the nut butter, vanilla extract, and chocolate chips, and stir well until blended, using hands to mix if necessary

  4. Drop small scoops of dough onto the prepared baking sheet, spacing them 2 inches apart

  5. If using a specific baking tray, use it to create cookie impressions; otherwise, grease the tray and press the dough firmly

  6. Bake for 15 to 16 minutes until golden brown

  7. Allow the cookies to cool for at least an hour; they will firm up, then transfer to a jar and enjoy
