Triple Chocolate Protein Banana Bread

Ingredients

  • 225g bananas
  • 60g coconut oil
  • 1 tsp vanilla extract
  • 100g vegan yoghurt
  • 50g brown sugar
  • 50g stevia
  • 100g gluten free flour
  • 50g chocolate protein powder
  • 1 tsp baking powder
  • 45g cocoa
  • 1/2 tsp salt
  • 75g vegan chocolate chips

Preparation

  1. Preheat the oven to 180°C.

  2. Mash the bananas. Add the coconut oil, vanilla extract and yoghurt. Whisk. Add the sugars and whisk again.

  3. In another bowl, stir together the flour, protein powder, baking powder, cocoa and salt.

  4. Sift the dry ingredients into the other mixture. Stir until combined and stir in most of the chocolate chips.

  5. Line a loaf tin and pour in the batter. Top with the remaining chocolate chips. Bake for 30 min.
