Turkish Açma Bread Rolls

Ingredients

  • 1 cup warm milk
  • 1 cup vegetable oil
  • 1 cup warm water
  • 1 packet yeast
  • 5 tablespoons sugar
  • 1.5 teaspoons salt
  • 1 teaspoon mahlep
  • 4-5 cups flour

Topping

  • 2 egg yolks
  • 1 tablespoon milk
  • nigella seeds

Preparation

  1. Add all ingredients to a kneading bowl, knead the dough, and let it rise.

  2. Divide the dough into orange-sized pieces, place 1 teaspoon butter on each, cover, and rest for 15 minutes.

  3. Roll each piece into a rope, shape into a ring or simit form, and rest for another 15 minutes.

  4. Place on a baking sheet lined with parchment paper, brush with a mixture of egg yolk and milk, sprinkle with nigella seeds or sesame seeds, let sit for 10 minutes, then bake in a preheated oven at 200°C until golden brown.
