Vegan Baked Oats with Zucchini and Blueberries

Ingredients

  • 1/2 cup oats
  • 1/2 large zucchini (grated)
  • 1 scoop vegan banana maple French toast protein powder
  • 1 tablespoon ground flaxseed meal
  • 1/4 cup frozen blueberries (optional, or chocolate chips)
  • Splash of vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup plant milk or water

Preparation

  1. Do not overdo the water; aim for a consistency similar to overnight oats, not as liquidy as stove-top or microwave oats.

  2. Mix all the ingredients together.

  3. Place the mixture in a ramekin or oven-friendly dish.

  4. Add extra blueberries on top.

  5. Bake at 350 degrees Fahrenheit for 30 minutes.

  6. Broil on low for 3 minutes.

  7. Top with raw creamy nut butter and enjoy.
