Vegan Baked Oats with Zucchini and Blueberries
Ingredients
- 1/2 cup oats
- 1/2 large zucchini (grated)
- 1 scoop vegan banana maple French toast protein powder
- 1 tablespoon ground flaxseed meal
- 1/4 cup frozen blueberries (optional, or chocolate chips)
- Splash of vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup plant milk or water
Preparation
Do not overdo the water; aim for a consistency similar to overnight oats, not as liquidy as stove-top or microwave oats.
Mix all the ingredients together.
Place the mixture in a ramekin or oven-friendly dish.
Add extra blueberries on top.
Bake at 350 degrees Fahrenheit for 30 minutes.
Broil on low for 3 minutes.
Top with raw creamy nut butter and enjoy.
