Vegan Berry Tarts with Spelt Flour Base

Ingredients

Base

  • 90 g 3/4 cup spelt flour
  • 75 g 1/2 cup date sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp vanilla
  • 3 Tbsp of melted vegan butter
  • 120 ml plant mylk

Topping

  • Fresh berries of your choice
  • 1/2 Tbsp corn or potato starch
  • 1 Tbsp of sugar
  • 120 ml 1/2 cup water

Preparation

  1. Preheat the oven to 180*C. Grease and flour 4 small tart baking tins.

  2. For the base mix the dry ingredients in a bowl. Add melted butter and plant mylk and mix until well combined.

  3. Equally distribute batter between the 4 baking tins. Bake for 20 min in the oven until golden. Let tarts cool for 10 minutes before carefully removing from the baking tins.

  4. Place the berries on the tarts once they have cooled.

  5. For the glaze mix starch and sugar with a few tablespoons of water until there are no lumps left in the mixture. Bring the remaining water to a boil. add the mixture and frequently stir for half a minute. Take off the heat and pour over the berries.

  6. Serve tarts with ice cream or vanilla yogurt.
