Bbq Tofu with Vegetables and Noodles

Ingredients

  • 2/3 package extra firm organic tofu, drained and pressed well to remove water
  • 1 tsp oil
  • 1.5 cups steamed broccoli florets cut into small pieces
  • 1 cup edamame
  • 1 cup cooked noodles
  • Cilantro, sauteed mushrooms, sesame seeds, scallions, red chili flakes for garnish

Sauce

  • 2 tbsp gochujang sauce
  • 1 tbsp rice vinegar
  • 1 tsp water
  • 1.5 tbsp agave or maple syrup
  • 1/4 tsp garlic powder
  • 1 tsp sesame oil
  • 1 tbsp dark soy sauce

Preparation

  1. Drain and press the tofu well to remove excess water if not already done.

  2. Cut the tofu into thin pieces.

  3. Add oil to a large pan and place the tofu pieces without overlapping, cooking in batches if necessary.

  4. Cook the tofu until lightly browned, about 5 minutes, then flip and cook for another 3 minutes.

  5. Meanwhile, whisk together the sauce ingredients in a bowl.

  6. When the tofu is cooked, add the sauce and toss to coat.

  7. Serve with the steamed broccoli, edamame, cooked noodles, and garnishes such as cilantro, sauteed mushrooms, sesame seeds, scallions, and red chili flakes.

Tips

  1. The sauce infuses the tofu and caramelizes slightly for enhanced flavor.

  2. Gochujang sauce can be purchased online or in most grocery stores.

  3. Customize the dish by using different vegetables or noodles as desired.
