Dairy-Free Vanilla Coconut Protein Ice Cream

Ingredients

  • 14 oz. can coconut milk (organic, unsweetened)
  • 1/4-1/3 cup monk fruit (depending on desired sweetness level - can also use maple syrup, stevia, or whichever sweetener you prefer)
  • 1 1/2 tsp vanilla extract (organic)
  • 1 scoop unflavored protein (optional, for a high protein version)

Preparation

  1. Mix all ingredients together until well combined.

  2. Pour the mixture into a Ninja CREAMi pint container.

  3. Freeze for at least 24 hours.

  4. Process in the Ninja CREAMi machine according to the manufacturer's instructions.

Notes

  1. This recipe can be made with the original Ninja CREAMi or Ninja Swirl.
