4-Ingredient Vegan Chocolate Mousse

Ingredients

  • 5 tablespoons (or 1/3 cup) cocoa powder
  • 1 can (or 400 ml) coconut milk (at least 75% fat)
  • 1 cup tightly packed soft dried dates (about 18)
  • Several drops vanilla extract

Preparation

  1. Refrigerate the coconut milk overnight to solidify and separate it. When ready, turn it upside down before opening and discard the transparent liquid on top, or save it for later use.

  2. Pit and halve the dates, softening them in warm water if necessary.

  3. Combine the dates with 2 rounded tablespoons of coconut milk and blend in a blender.

  4. If you do not want date skins, strain the paste. Otherwise, add the remaining coconut milk and cocoa powder and continue blending until smooth.

  5. Add the vanilla extract and blend.

  6. Blend the mixture until the desired consistency is reached, and add extra flavor if needed.

  7. Refrigerate for several hours.

Tips

  1. Use coconut milk with at least 75% fat for a smooth texture.

  2. The transparent liquid from coconut milk can be saved for use in smoothies.
