Homemade Cherry Syrup for Pancakes and Cakes

Ingredients

  • 3 kg washed and pitted cherries
  • 4 cups sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice

Preparation

  1. Add cherries and half a cup of sugar to a large pot. They will create juice as they heat.

  2. Slowly bring cherries to a boil and add remaining sugar, 1 teaspoon of lemon zest, and 1 teaspoon of lemon juice.

  3. Boil for 30-40 minutes to slightly thicken.

  4. Put into sterilized jars with lids and let cool.

  5. This is a runny jam with large chunks of cherries.
