Eggs with Crispy Cauliflower Gnocchi and Avocado

Ingredients

  • 2 eggs
  • Trader Joe's cauliflower gnocchi
  • 1/2 avocado
  • ghee or butter or oil

Preparation

  1. Thaw the cauliflower gnocchi before cooking.

  2. Sauté the gnocchi in a little ghee until crispy.

  3. Remove the gnocchi from the pan.

  4. Fry the eggs in the same pan with the leftover ghee. You can use butter or oil instead of ghee.
