Fish Tajine with Tomatoes
Ingredients
- 10 small fish
- 1 tablespoon cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ginger powder
- 1 teaspoon chopped chili
- 1 teaspoon coriander
- 1 tablespoon salt
- 1/2 teaspoon black pepper
- 1 large chopped onion
- 10 garlic cloves, sliced
- 1 medium chopped red bell pepper
- 2 chopped green chili peppers
- 2 tablespoons tomato paste
- 2 large chopped tomatoes
- 1 cup chopped dill
- 1 cup chopped fresh cilantro
For frying
- Corn oil
Preparation
Mix all the dry spices together in a bowl
Heat corn oil in a large pot or tagine over medium heat
Sauté the chopped onion, sliced garlic, chopped red bell pepper, and chopped green chili peppers until softened
Add tomato paste and chopped tomatoes, cook until they start to break down and form a sauce
Stir in the spice mixture and cook for a few minutes to release flavors
Add the fish pieces and cook until they are opaque and flaky
Stir in the chopped dill and cilantro, and cook for another minute
Serve hot, optionally with bread or rice
