No-Bake Coconut Lemon Energy Bites

Ingredients

  • 2 cups pitted Medjool dates
  • 1 cup rolled oats
  • 1/2 cup shredded coconut
  • 2 tablespoons chia seeds
  • lemon zest
  • 2 tablespoons lemon juice
  • 1.5 teaspoons vanilla
  • sprinkle of ground ginger
  • sprinkle of sea salt

Preparation

  1. Combine all ingredients in a food processor and blend until well mixed and sticky

  2. Roll the mixture into small bite-sized balls

  3. Refrigerate for at least 30 minutes to set and firm up
