No-Bake Coconut Lemon Energy Bites
Ingredients
- 2 cups pitted Medjool dates
- 1 cup rolled oats
- 1/2 cup shredded coconut
- 2 tablespoons chia seeds
- lemon zest
- 2 tablespoons lemon juice
- 1.5 teaspoons vanilla
- sprinkle of ground ginger
- sprinkle of sea salt
Preparation
Combine all ingredients in a food processor and blend until well mixed and sticky
Roll the mixture into small bite-sized balls
Refrigerate for at least 30 minutes to set and firm up
