Simple Indonesian Fried Rice

Ingredients

  • Leftover cold rice (as needed)
  • 1 handful soaked anchovies
  • 1 red onion
  • 6 cloves garlic
  • 12 bird's eye chilies
  • 5 eggs
  • A little oyster sauce
  • A little fish sauce
  • Chopped chilies for garnish, to taste

Preparation

  1. Crush the anchovies, red onion, and chilies coarsely, and crush garlic separately.

  2. Heat oil in a pan and sauté garlic until fragrant.

  3. Add the crushed mixture and stir until golden.

  4. Add eggs, let them set for a minute without stirring, then stir to form chunks.

  5. Add salt, sugar, and seasoning powder to taste.

  6. Add oyster sauce and fish sauce.

  7. Add the rice and stir well.

  8. Fry for 5 minutes, then taste and adjust seasoning as needed.

Serving suggestions

  1. Serve hot, sprinkled with chopped chilies, and enjoy with coffee, tea, or milo.
