Simple Indonesian Fried Rice
Ingredients
- Leftover cold rice (as needed)
- 1 handful soaked anchovies
- 1 red onion
- 6 cloves garlic
- 12 bird's eye chilies
- 5 eggs
- A little oyster sauce
- A little fish sauce
- Chopped chilies for garnish, to taste
Preparation
Crush the anchovies, red onion, and chilies coarsely, and crush garlic separately.
Heat oil in a pan and sauté garlic until fragrant.
Add the crushed mixture and stir until golden.
Add eggs, let them set for a minute without stirring, then stir to form chunks.
Add salt, sugar, and seasoning powder to taste.
Add oyster sauce and fish sauce.
Add the rice and stir well.
Fry for 5 minutes, then taste and adjust seasoning as needed.
Serving suggestions
Serve hot, sprinkled with chopped chilies, and enjoy with coffee, tea, or milo.
