Tasty Cauliflower Rice Taco Bowls with Veggies
Ingredients
- frozen bag of cauliflower rice
- taco seasoning
- sweet potato
- 1 teaspoon olive or avocado oil
- assorted vegetables
- avocado for mashing
- guacamole
- salsa
- white rice (optional)
- ghee (optional)
- pink Himalayan salt (optional)
Preparation
Sauté frozen cauliflower rice in a skillet until it thaws slightly, then add taco seasoning.
In another skillet, dice sweet potato and coat with 1 teaspoon of olive or avocado oil and a sprinkle of taco seasoning.
Cook the sweet potato over medium heat for about 7-8 minutes.
Add vegetables to the skillet and sauté until the sweet potatoes are soft; cut them smaller for faster cooking.
Top with mashed avocado, guacamole, and a side of salsa.
For the white rice version: Make a big batch of white rice and add a little ghee and pink Himalayan salt.
