Tasty Cauliflower Rice Taco Bowls with Veggies

Ingredients

  • frozen bag of cauliflower rice
  • taco seasoning
  • sweet potato
  • 1 teaspoon olive or avocado oil
  • assorted vegetables
  • avocado for mashing
  • guacamole
  • salsa
  • white rice (optional)
  • ghee (optional)
  • pink Himalayan salt (optional)

Preparation

  1. Sauté frozen cauliflower rice in a skillet until it thaws slightly, then add taco seasoning.

  2. In another skillet, dice sweet potato and coat with 1 teaspoon of olive or avocado oil and a sprinkle of taco seasoning.

  3. Cook the sweet potato over medium heat for about 7-8 minutes.

  4. Add vegetables to the skillet and sauté until the sweet potatoes are soft; cut them smaller for faster cooking.

  5. Top with mashed avocado, guacamole, and a side of salsa.

  6. For the white rice version: Make a big batch of white rice and add a little ghee and pink Himalayan salt.
