Tomato Tahini Pasta and Sausage
Ingredients
- 1 plant based sausage
- 1 serving of whole wheat pasta of choice
- 1/4 red onion diced
- 1 can diced tomatoes
- 1 heaping tbsp tomato paste
- 1 heaping tbsp tahini
- 1 tsp dry basil
- 1 tsp dry oregano
- 1 trap minced garlic
- 1/2 tsp red pepper flakes
- 1 tsp smoked paprika
- 1/2 cup water
- 1 bell pepper cut into strips
- 2 handfuls spinach
- salt and pepper to taste
Preparation
Bring a pot of water to a boil
Once boiling add a pinch of salt then add in pasta and cook according to instructions
Drain and set aside
In a separate pan add onion and sauté until softened
Add in sausage and peppers and sauté allowing sausage to brown/sear slightly
Add in minced garlic and sauté until fragrant
Add in tomato paste, diced tomatoes, and all seasonings
Stir to combine then add in tahini and water
Stir and bring to a simmer for about 10 minutes
Add in spinach and allow to wilt then remove from heat
Stir in drained pasta and stir to fully combine
If you can’t do gluten you can replace the sausage with canellini beans and the pasta with a gluten free alternative (bean or corn pastas work great
