Tomato Tahini Pasta and Sausage

Ingredients

  • 1 plant based sausage
  • 1 serving of whole wheat pasta of choice
  • 1/4 red onion diced
  • 1 can diced tomatoes
  • 1 heaping tbsp tomato paste
  • 1 heaping tbsp tahini
  • 1 tsp dry basil
  • 1 tsp dry oregano
  • 1 trap minced garlic
  • 1/2 tsp red pepper flakes
  • 1 tsp smoked paprika
  • 1/2 cup water
  • 1 bell pepper cut into strips
  • 2 handfuls spinach
  • salt and pepper to taste

Preparation

  1. Bring a pot of water to a boil

  2. Once boiling add a pinch of salt then add in pasta and cook according to instructions

  3. Drain and set aside

  4. In a separate pan add onion and sauté until softened

  5. Add in sausage and peppers and sauté allowing sausage to brown/sear slightly

  6. Add in minced garlic and sauté until fragrant

  7. Add in tomato paste, diced tomatoes, and all seasonings

  8. Stir to combine then add in tahini and water

  9. Stir and bring to a simmer for about 10 minutes

  10. Add in spinach and allow to wilt then remove from heat

  11. Stir in drained pasta and stir to fully combine

  12. If you can’t do gluten you can replace the sausage with canellini beans and the pasta with a gluten free alternative (bean or corn pastas work great
