Ultimate Egg Mayo Sandwich

Ingredients

  • 2 eggs
  • Light mayonnaise
  • Sea salt
  • Fresh black pepper
  • Smoked cheddar
  • Onion crispies
  • Soya and linseed bread
  • Crunchlets

  • Part-baked baguette

Preparation

  1. Bring water to a boil, add the eggs, and cook for 8 minutes.

  2. Cool the eggs under cold water, peel them, and mash in a bowl.

  3. Mix the mashed eggs with light mayonnaise, sea salt, and fresh black pepper to taste.

  4. Grate the smoked cheddar.

  5. Spread the egg mixture on slices of soya and linseed bread, then top with grated smoked cheddar and onion crispies.

Tips

  1. For the ultimate version, use a warm part-baked baguette instead of bread.

  2. Serve with crunchlets on the side.
