Vegan Gluten-Free Apple Crumble

Ingredients

Topping

  • 1/2 cup gluten-free rolled oats
  • 1/2 cup almond flour
  • 1/2 cup chopped pecans or walnuts
  • Pinch of salt
  • 1/2 teaspoon ground cinnamon
  • 3 tbsp maple syrup
  • 1 tbsp melted coconut oil

Filling

  • 4-5 medium apples, peeled and thinly sliced (about 4 cups)
  • 2 tbsp coconut or brown sugar
  • 1/2 tbsp arrowroot or cornstarch
  • 1 tsp ground cinnamon
  • 2 tbsp maple syrup
  • Vanilla ice cream, to serve (optional)

Preparation

  1. Preheat the oven to 350°F/180°C.

  2. Prepare the filling by mixing sliced apples with coconut or brown sugar, arrowroot or cornstarch, ground cinnamon, and maple syrup.

  3. Prepare the topping by combining gluten-free rolled oats, almond flour, chopped pecans or walnuts, salt, ground cinnamon, maple syrup, and melted coconut oil.

  4. Assemble the crumble by placing the filling in a baking dish and sprinkling the topping evenly over it.

  5. Bake at 350°F/180°C for 30-40 minutes.

  6. Serve with vanilla ice cream if desired.
