Baked Apple Crumble with Peanut Butter
Ingredients
Apples
- 4 apples
- 3 tablespoons maple syrup
- Juice of one lemon
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ginger powder
Oats
- 1 1/2 cups oats
- 3 tablespoons peanut butter or other nut and seed butter
- 1 tablespoon almond flour or all-purpose flour
- 3 tablespoons maple syrup
- Salt to taste
Optional
- 1 teaspoon cornstarch for apple crumble variation
Preparation
Set oven to 350°F.
In a bowl, combine apples, lemon juice, a pinch of salt, and pumpkin pie spice. Toss together with clean hands and place at the bottom of a baking dish.
In a separate bowl, combine all oat crumble ingredients and stir to combine using a fork.
With hands, evenly spread oat mixture over apples.
Place the baking dish in the oven.
Bake for 25-30 minutes for granola consistency with tender apples.
For apple crumble, add 1 teaspoon cornstarch to the apple mixture before baking and bake for 45-50 minutes until apples are soft and gooey.
