Banana Peanut Butter Oats with Sautéed Apples

Ingredients

  • 1/3 cup rolled oats
  • 1 tbsp ground flaxseed
  • 1 sliced banana or 2 tsp sweetener
  • 1/2 tsp pumpkin pie spice or cinnamon
  • 1 cup unsweetened almond milk
  • 1 tbsp peanut butter
  • Salt to taste

Toppings

  • 1 apple
  • 2 tsp maple syrup
  • Pinch of cinnamon
  • Pinch of salt
  • Blackberries
  • Pepitas
  • Dollop of chocolate tahini

Preparation

  1. Add all base ingredients to a saucepan, stir to combine, and cook for 5 minutes until thickened.

  2. Chop one apple into cubes and place in a pan.

  3. Sauté the apples with 2 tsp maple syrup, a pinch of salt, and a pinch of cinnamon on low heat until softened, coated, and slightly browned.

  4. Top the oats with the sautéed apples, blackberries, pepitas, and a dollop of chocolate tahini.
