Apple Walnut Baked Oats
Ingredients
- 2.5 cups whole oats
- 2 tbsp. melted coconut oil
- 2 tbsp. chia seeds
- 2 tbsp. almond meal or flaxseed meal
- 2 tbsp. maple syrup
- 1/2 tsp. sea salt
- 1 tsp. ground cinnamon
- 2 cups of coconut or nut milk
- 1 cup of chopped walnuts (sub for any nuts you have)
- 3 tbsp. pnb (or any nut butter)
- 1 tsp. vanilla bean paste or pure vanilla extract.
Preparation
Preheat oven to 180
Place all dry ingredients in a large bowl and mix evenly
Then add all the remaining ingredients and stir through until mixed well
Let the mixture sit in the bowl for 5 minutes so the chia seeds can coagulate. If it seems a little dry add in a dash more milk or water
Line a loaf tin with baking paper and pour the mixture, press evenly and into the sides
If you have additional apple moons, layer/overlap over the center or even all over & sprinkle with additional cinnamon
Bake in preheated over for 35-45 minutes or until the loaf has come away from the edges of dish and the topping is golden
Remove from oven and sit for 10 minutes
Serve warm with warmed nut milk + a dollop of @thecocotribe Maple Pecan yoghurt , berries + a little drizzle of honey or maple syrup
