Apple Walnut Baked Oats
Ingredients
- 2.5 cups whole oats
- 2 average sized apples grated plus a little extra apple to dice into moons for topping (optional)
- 2 tablespoons melted coconut oil
- 2 tablespoons chia seeds
- 2 tablespoons almond meal or flaxseed meal
- 2 tablespoons maple syrup
- 1/2 teaspoon sea salt
- 1 teaspoon ground cinnamon
- 2 cups coconut or nut milk
- 1 cup chopped walnuts (substitute for any nuts you have)
- 5 Medjool dates chopped small or 1/4 cup raisins
- 3 tablespoons PNB (or any nut butter)
- 1 teaspoon vanilla bean paste or pure vanilla extract
Preparation
Preheat oven to 180 degrees Celsius.
Place all dry ingredients in a large bowl and mix evenly.
Add all the remaining ingredients and stir through until mixed well.
Let the mixture sit in the bowl for 5 minutes so the chia seeds can coagulate. If it seems a little dry, add a dash more milk or water.
Line a loaf tin with baking paper and pour the mixture in, pressing it evenly into the sides.
If you have additional apple moons, layer or overlap them over the center or all over and sprinkle with additional cinnamon.
Bake in the preheated oven for 35-45 minutes or until the loaf has come away from the edges of the dish and the topping is golden.
Remove from oven and let it sit for 10 minutes.
Serve warm with warmed nut milk, a dollop of Maple Pecan yoghurt, berries, and a little drizzle of honey or maple syrup.
