Delicious Buddha Bowl
Ingredients
- -2 medium sweet potatoes (500g), cut into cubes
- -1 cup cooked chickpeas (250g)
- -1 cup chickpea flour (100g)
- -1 tsp salt, 1 tsp garlic powder, 1/2 tsp turmeric, 1 tsp cumin, 1/2 tsp coriander, 1/4 tsp cayenne
- -1/4 cup chopped parsley
- -1-2 tbsp olive oil, plus more for brushing
Preparation
Preheat oven to 400°F (200°C)
Brush the sweet potatoes with 1 tbsp olive oil and bake on a lined tray for 30 minutes
Once cooled, place with the remaining ingredients in a food processor and blend into a smooth mixture
Form into balls and place onto the tray
Bake for 20-25 minutes, flipping halfway through
Let cool and enjoy
