Delicious Buddha Bowl

Ingredients

  • -2 medium sweet potatoes (500g), cut into cubes
  • -1 cup cooked chickpeas (250g)
  • -1 cup chickpea flour (100g)
  • -1 tsp salt, 1 tsp garlic powder, 1/2 tsp turmeric, 1 tsp cumin, 1/2 tsp coriander, 1/4 tsp cayenne
  • -1/4 cup chopped parsley
  • -1-2 tbsp olive oil, plus more for brushing

Preparation

  1. Preheat oven to 400°F (200°C)

  2. Brush the sweet potatoes with 1 tbsp olive oil and bake on a lined tray for 30 minutes

  3. Once cooled, place with the remaining ingredients in a food processor and blend into a smooth mixture

  4. Form into balls and place onto the tray

  5. Bake for 20-25 minutes, flipping halfway through

  6. Let cool and enjoy
