This Naan Bread

Ingredients

  • 1 large eggplant
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 cloves of crushed garlic
  • 3 tablespoons of olive oil
  • 1/2 teaspoon of salt (add a pinch more if needed)
  • 1/2 teaspoon of parsley

Preparation

  1. Place the eggplant whole in the oven and cook for 40 minutes

  2. Set aside to cool

  3. Once cooled remove the flesh
