Tahini Aubergine N Lentils Bowl

Ingredients

  • 2/3 of an aubergine, chopped into wedges
  • 1 tsp olive oil
  • 2 cloves of black garlic (or normal)
  • 1/2 a red onion, diced
  • 1 romano red pepper, chopped
  • 1/2 can lentils, drained
  • handful of cherry tomatoes, halved
  • 1 tbsp chermoula sauce
  • small handful of parsley, chopped
  • handful of rocket
  • 1 tbsp tahini
  • juice of 1/4 lemon
  • few cashew nuts

Preparation

  1. Mash the garlic w/ 1 tsp oil and coat the aubergine

  2. Roast the pepper, onion & aubergine 25 mins w/ s&p (turning half way)

  3. Saute the lentils, tomatoes, sauce, parsley, s&p & cook 5 mins

  4. Mix the rocket with the lentil mix

  5. Mix tahini, squeeze of lemon, 2 tsp water

  6. Assemble: lentils, roasted veg, tahini, cashews & more parsley
