Sweet coconut oats with vanilla stewed berries
Ingredients
- 1 cup rolled oats (gluten free if you want)
- 1 cup water
- 2 tbsp @naturescharm sweetened condensed coconut milk
- pinch of sea salt
- 1.5 cups mixed berries
- 0.5 tsp vanilla extract
- 1-2 tbsp peanut butter
Optional toppings
- a couple of pieces of dark chocolate, chopped
- handful of fresh berries
- quinoa puffs
Preparation
Put the berries in a small pot together with the vanilla and 2 tbsp water. Let simmer for a few minutes until nice and warm.
In the meantime, cook your oats, water and salt for 3-4 minutes. Add the sweetened condensed coconut milk and give it a stir.
Serve your sweet oatmeal with your berries, peanut butter and toppings of your choice.
