Sweet coconut oats with vanilla stewed berries

Ingredients

  • 1 cup rolled oats (gluten free if you want)
  • 1 cup water
  • 2 tbsp @naturescharm sweetened condensed coconut milk
  • pinch of sea salt
  • 1.5 cups mixed berries
  • 0.5 tsp vanilla extract
  • 1-2 tbsp peanut butter

Optional toppings

  • a couple of pieces of dark chocolate, chopped
  • handful of fresh berries
  • quinoa puffs

Preparation

  1. Put the berries in a small pot together with the vanilla and 2 tbsp water. Let simmer for a few minutes until nice and warm.

  2. In the meantime, cook your oats, water and salt for 3-4 minutes. Add the sweetened condensed coconut milk and give it a stir.

  3. Serve your sweet oatmeal with your berries, peanut butter and toppings of your choice.
