Fluffy Chocolate Protein Pancakes with Toppings
Ingredients
- 50g oat flour
- 50g rice flour
- 15g cacao
- 25g chocolate protein (soy or rice based)
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 ripe banana or 60g
- 1 tsp apple cider vinegar
- 100-200ml plant milk
Preparation
Mash the banana with a fork and mix the puree with the plant milk and apple cider vinegar.
Roughly mix the dry ingredients in a big bowl, add the banana mixture and stir until it’s all well combined.
Bake the pancakes in a well coated, oiled pan on each side for around 1-2 minutes and serve them with toppings of your choice.
Tips
If you want to leave out the protein powder, use less plant milk, probably 100-150ml.
