Keto Chia Jam

Ingredients

  • 2 cups frozen raspberries or combo of berries like blueberries, boysenberries, strawberries
  • 2 tablespoons chia seeds
  • 1/2 tablespoon lemon juice
  • 3 tablespoons powdered erythritol or monk fruit or 1/4 cup sugar free maple flavored syrup or 1/4 teaspoon stevia drops

Preparation

  1. In a medium size mixing bowl, add frozen raspberries, chia seeds, lemon juice and powdered sweetener of choice. I recommend raspberries as they contains less sugar and carbs than others berries, check my keto fruit list to choose other fruits

  2. Cover and keep the bowl at room temperature for 1 hour or until the berries are defrosted

  3. When the berries are fully defrosted, mash them with a fork or potato masher until it reach the consistency you love

  4. If you don't like chia seeds lumps texture you can blend the jam in a blender

  5. This recipe smakes 12 servings of 2 tablepoons of jam

  6. Transfer the chia jam into an airtight container and store for 2 weeks in the fridge or freeze in single serve. I recommend freezing jam in ice cube tray and defrost one cube at a time, 1 cube = 1 serve= 2 tablespoons

  7. Use on top of keto bread slices or keto english mufffins
