Sweet Potato Oats Breakfast Bowl
Ingredients
- 1/2 cup oats
- 1/4 cup cooked and mashed sweet potato without skin
- 1/2 banana
- 1 medjool date
- 1 tbsp flax meal
- pinch of turmeric
- pinch of cinnamon
- pinch of salt
- 1 cup or more of almond milk
Toppings
- Banana stars
- Millet puffs
- Granola
- Blueberries
Preparation
Cook the mixture over stove top on medium heat.
While stirring, mash banana and dates with a spatula as they warm through.
Add additional almond milk to reach desired consistency if needed.
Pour into a bowl once consistency is to your liking.
Top with goodies such as banana stars, millet puffs, granola, and blueberries.
