Sweet Potato Oats Breakfast Bowl

Ingredients

  • 1/2 cup oats
  • 1/4 cup cooked and mashed sweet potato without skin
  • 1/2 banana
  • 1 medjool date
  • 1 tbsp flax meal
  • pinch of turmeric
  • pinch of cinnamon
  • pinch of salt
  • 1 cup or more of almond milk

Toppings

  • Banana stars
  • Millet puffs
  • Granola
  • Blueberries

Preparation

  1. Cook the mixture over stove top on medium heat.

  2. While stirring, mash banana and dates with a spatula as they warm through.

  3. Add additional almond milk to reach desired consistency if needed.

  4. Pour into a bowl once consistency is to your liking.

  5. Top with goodies such as banana stars, millet puffs, granola, and blueberries.
