Coconut Date Oatmeal

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp shredded coconut
  • 1 tbsp ground flaxseed
  • 1/2 tsp cinnamon
  • 1 medjool date
  • 1 mashed banana
  • 1 cup almond milk
  • pinch of salt

Preparation

  1. Toss everything except salt into a sauce pan, give a quick stir and bring mixture to a simmer over low to medium heat

  2. As mixture cooks, use spoon or spatula to mash date lightly (this helps break it up a little into the oatmeal)

  3. After 5 minutes of cooking, remove from heat and allow to continue thickening to your preference as it cools. At this time I usually prep the toppings. I went with some sliced up pluots (the reddish looking slices), strawberries, Rainer cherries, blueberries, nibs and a sprinkle of some seed mix I got from Trader Joe’s
