Coconut Date Oatmeal
Ingredients
- 1/2 cup rolled oats
- 1 tbsp shredded coconut
- 1 tbsp ground flaxseed
- 1/2 tsp cinnamon
- 1 medjool date
- 1 mashed banana
- 1 cup almond milk
- pinch of salt
Preparation
Toss everything except salt into a sauce pan, give a quick stir and bring mixture to a simmer over low to medium heat
As mixture cooks, use spoon or spatula to mash date lightly (this helps break it up a little into the oatmeal)
After 5 minutes of cooking, remove from heat and allow to continue thickening to your preference as it cools. At this time I usually prep the toppings. I went with some sliced up pluots (the reddish looking slices), strawberries, Rainer cherries, blueberries, nibs and a sprinkle of some seed mix I got from Trader Joe’s
