Magnificent Carrot Cake with Chocolate Pudding

Ingredients

Cake

  • 1 cup oil
  • 2 large carrots
  • 2 cups sugar
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder

Chocolate pudding

  • 3 eggs
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1 cup cocoa powder

Caramel

  • 1 cup sugar
  • 1/2 cup water

Preparation

Cake batter

  1. Blend 1 cup oil, 2 chopped carrots, and 3 eggs in a blender

  2. In a bowl, sift 3 cups all-purpose flour, 2 cups sugar, and 1 tablespoon baking powder

  3. Mix the dry ingredients with the blended liquid until homogeneous

Caramel

  1. Make a caramel syrup with 1 cup sugar and 1/2 cup water; cook until caramelized and set aside

Pudding and assembly

  1. Blend 1 can sweetened condensed milk, 1 can evaporated milk, 3 eggs, and cocoa powder in a blender

  2. Pour the caramel into a bundt pan, add the chocolate mixture, and then pour the carrot cake batter on top

  3. Bake in a preheated oven at 200Β°C (400Β°F) in a water bath until the cake is cooked
