Magnificent Carrot Cake with Chocolate Pudding
Ingredients
Cake
- 1 cup oil
- 2 large carrots
- 2 cups sugar
- 3 eggs
- 3 cups all-purpose flour
- 1 tablespoon baking powder
Chocolate pudding
- 3 eggs
- 1 can sweetened condensed milk
- 1 can evaporated milk
- 1 cup cocoa powder
Caramel
- 1 cup sugar
- 1/2 cup water
Preparation
Cake batter
Blend 1 cup oil, 2 chopped carrots, and 3 eggs in a blender
In a bowl, sift 3 cups all-purpose flour, 2 cups sugar, and 1 tablespoon baking powder
Mix the dry ingredients with the blended liquid until homogeneous
Caramel
Make a caramel syrup with 1 cup sugar and 1/2 cup water; cook until caramelized and set aside
Pudding and assembly
Blend 1 can sweetened condensed milk, 1 can evaporated milk, 3 eggs, and cocoa powder in a blender
Pour the caramel into a bundt pan, add the chocolate mixture, and then pour the carrot cake batter on top
Bake in a preheated oven at 200Β°C (400Β°F) in a water bath until the cake is cooked
