Berry Oatmeal Porridge with Blueberries and Acai

Ingredients

  • 1.25 cups oats (makes 2 big bowls)
  • 1 cup soy milk
  • 1 cup almond milk
  • 0.5 cup blueberries, chopped finely
  • 2 tbsp blue agave
  • Handful of nuts of your choice (e.g., 0.25 cup blanched almonds)
  • 2 tsp acai powder

Preparation

  1. Blend blueberries with some milk, acai powder, and almonds to make a fine paste.

  2. In a pan, pour milk and add oats, stir for a minute, and cook for 5 minutes on low heat, stirring occasionally.

  3. Once oats are done, add the blueberry mixture, mix well, and cook for another 2 minutes, stirring continuously.

  4. Decorate with any fruit of your choice and enjoy this recipe.
