No-Bake Berry Ganache Cups

Ingredients

  • 1 packet raspberries
  • 2 tablespoons soaked chia seeds
  • 250 grams dark chocolate
  • 30 ml rum or vodka (optional)
  • 100 ml cooking cream
  • Berries for garnish
  • Sugar dust for garnish

Preparation

  1. Mash 1 packet of raspberries, or use strawberries as an alternative

  2. Add 2 tablespoons soaked chia seeds into the mashed raspberries and set aside

  3. Melt 250 grams dark chocolate

  4. Stir the melted chocolate to bring down the temperature

  5. Brush the melted dark chocolate on the inside surface of a silicon mould, covering the walls and bottom

  6. Repeat the brushing procedure twice to coat it properly

  7. Place the mould in the fridge to set

  8. To make ganache, add 30 ml rum or vodka to the remaining melted chocolate if desired

  9. Add 100 ml cooking cream to the mixture

  10. Mix everything well to prepare the ganache

  11. Gently demould the chocolate cups once set

  12. Fill each cup with ganache and the raspberry chia seeds mixture

  13. Cover the filling with more ganache

  14. Place in the fridge to set for 5 to 10 minutes

  15. Garnish with additional berries and sugar dust

Tips

  1. This dessert can be stored in the fridge and should stay good for 4 to 5 days
