Easy Raspberry Quark and Cookie Dessert

Ingredients

  • 8 sandwich cookies (about 150 g)
  • 100 g raspberries
  • 1 packet bourbon vanilla sugar
  • 500 g quark (20% fat)
  • 30 g sugar
  • 1 tablespoon honey
  • Raspberries for garnish (optional)

Preparation

  1. Mash raspberries with vanilla sugar in a bowl until a puree forms

  2. Sweeten the quark with sugar and honey

  3. Chop six cookies into coarse pieces

  4. Halve the remaining two cookies and set aside for garnish

  5. Distribute half of the crushed cookies into four 100 ml dessert glasses

  6. Spread half of the quark cream on top and smooth

  7. Cover with the raspberry puree

  8. Layer the remaining cookie pieces and the rest of the quark cream into the glasses and chill until serving

  9. Garnish with the reserved halved cookies and fresh raspberries just before serving

Tips

  1. For a lighter version, use low-fat quark instead of 20% fat quark
