Super Quick and Easy Peanut Butter and Jelly Banana Pancakes
Ingredients
- 200g mashed over ripe banana
- 100g oats blended to flour (gf if required)
- A squeeze of lemon juice
- 1 tsp baking powder (gf if required)
- 100ml any milk (I use soya)
- A splash of water (depending how thick you want them)
Preparation
This recipe makes 4-5 very thick pancakes.
Chop banana and microwave for 1 minute until mushy. Old spotty bananas are best and even better if you’ve got some from frozen as when microwaved they create a natural sweet juice.
Put everything into a bowl and mix until smooth.
Drizzle some oil into a pan and fry pancakes on each side for a minute or so.
Top however you like, for example with peanut butter and strawberry jam.
