Cherry and Vanilla Oat Pancakes
Ingredients
- 200g mashed banana
- 100g oats
- A squeeze of lemon juice
- 1 tsp baking powder (gf if required)
- 100ml milk (I use soya)
- A splash of water (depending on thickness)
Topping
- A drizzle of maple syrup
- A handful of frozen cherries
- 2 tbsp plain dairy free yoghurt
Preparation
Chop banana and microwave for 1 minute until mushy.
Put everything into a bowl and mix until smooth.
Spray some coconut oil onto a pan and fry pancakes on each side for a minute or so.
Warm the frozen cherries until hot and top the pancakes with cherries, maple syrup, and yoghurt as desired.
