Cherry and Vanilla Oat Pancakes

Ingredients

  • 200g mashed banana
  • 100g oats
  • A squeeze of lemon juice
  • 1 tsp baking powder (gf if required)
  • 100ml milk (I use soya)
  • A splash of water (depending on thickness)

Topping

  • A drizzle of maple syrup
  • A handful of frozen cherries
  • 2 tbsp plain dairy free yoghurt

Preparation

  1. Chop banana and microwave for 1 minute until mushy.

  2. Put everything into a bowl and mix until smooth.

  3. Spray some coconut oil onto a pan and fry pancakes on each side for a minute or so.

  4. Warm the frozen cherries until hot and top the pancakes with cherries, maple syrup, and yoghurt as desired.
