Zucchini in Oats

Ingredients

  • 3/4 c oats
  • 1 tbsp ground flaxseed
  • 1 c finely diced zucchini
  • 1 c frozen mixed berries (I set mine out on the counter to thaw while I work out so when I’m ready to eat they’re soo juicy! ?2 tbsp unsweetened cashew yogurt + cinnamon

Preparation

  1. Mix the oats, flax and zucchini

  2. Add water until it just covers the oats

  3. Microwave 2 min, stir, microwave another 2 min, stir (you just microwave and stir until they’re thick and all the water has been absorbed)

  4. Add your desired toppings and devour
